Dishwasher/Polisher - Mitsi

THE ROLE

We are seeking a reliable, detail-oriented Dishwasher / Polisher to join our team at Mitsi. In this role, you will be the backbone of our back-of-house operations, ensuring that the kitchen, bar, and service staff have a continuous supply of clean, sanitized, and polished tableware. You will bridge the gap between our culinary and service teams by maintaining strict health department standards and ensuring our guests receive an exceptional experience free of spotted glassware or smudged cutlery.

RESPONSIBILITIES

• • Load, operate, and unload commercial dishwashing machinery according to safety protocols; hand-wash delicate or oversized items.
  • Correctly polish glassware, silverware, and plates to meet establishment standards. Ensure all items are spot-free before they reach the guest.
  • Sort, stack, and safely store cleaned and polished wares in designated storage or service stations.
  • Sweep and mop kitchen floors, wipe down counters, empty garbage, and safely clear kitchen waste/recycling throughout the shift.
  • Clean and perform basic routine maintenance on the dish machine (clearing screens, arms, and baskets); monitor water temperatures and chemical levels. 
  • Unload incoming deliveries, bring heavy items to appropriate storage rooms, and assist the team with prep work or closing duties as assigned. 

QUALIFICATIONS AND PREREQUISITES

• • Prior experience as a dishwasher, polisher, or kitchen utility hand in a fast-paced food service environment is a plus, but we are willing to train the right candidate.
  • Full understanding of California food safety and sanitation procedures.
  • High standard of cleanliness with a meticulous eye for spotting smudges, water marks, or residue on plates and glassware.
  • Ability to stand for long periods and comfortably lift and carry heavy trays, racks, or delivery boxes weighing up to 50 lbs.
  • Comfortable moving up and down stairs if necessary, navigating tight kitchen space safely, and managing workflow during peak hours.
  • Availability: 18-25 hours a week. Thursday - Saturday, late night hours and flexibility to work other days of the week as needed.
